I wouldn’t call myself Master Chef Amy just yet… However, I still enjoy cooking and following recipes! Here are some recipes I have tried and got great reviews from my family. Enjoy!

VERY SIMPLE and EASY to make! A few years ago, an old classmate shared this recipe with me. I ate this last night over salad and wish I baked my salmon just a little bit longer. Squeezing a lemon wedge over the salmon is up to your preference. I did try to bake the salmon on top of a slice of lemon once and it didn’t turn or that bad either. Happy experimenting in the kitchen and enjoy!

WHAT YOU NEED:

  • Salmon
  • Mayonnaise
  • Furikake Seasoning
  • Salt & Pepper (to taste)
  • OIL

Furikake Salmon Ingredients

STEP-BY-STEP INSTRUCTIONS:

** Preheat oven to 450 degrees F (232 degrees C) **

1: Lightly coat baking pan & salmon with oil

2: Drizzle Mayonnaise

3: Spread Mayonnaise. Add Salt & Pepper (to taste)

4: Sprinkle Furikake seasoning covering top of salmon

5: BAKE salmon for 18-20 mins & Serve!

OMG!! THANK HEAVENS FOR PINTEREST because I found this quick and EASY recipe! The best part about it? It only requires 4 main ingredients… YES I SAID 4!

Luckily, I had enough ingredients left to make a second batch while I was waiting for the rest of my dinner to finish cooking.

** Preheat oven to 350 degrees F (176 degrees C) **

WHAT YOU NEED:

  • 1 cup Mozzarella Cheese
  • 1/4 cup Parmesan Cheese
  • 1 Egg
  • Garlic Powder (use to your discretion)

To Garnish (optional):

  • Oregano & Grated Parmesan Cheese

Keto Garlic Cheese Bread

Directions:

Mix all the ingredients into a bowl. Be sure to mix the egg well with the cheese so you don’t see any streaks of the yolk. The mixture should look like a pale yellow color. Once everything is mixed well, place parchment paper/wax paper onto a baking sheet. Spread the cheese mix onto the baking sheet and press down to form a rectangular or circular shape. Careful not to press down too hard to the point where you can see the bottom of the baking sheet.

The recipe says to bake for 15 minutes. I baked mine for 20-25 minutes until it looked golden brown.

Cut the cheese “bread” and garnish with oregano and grated Parmesan cheese. Enjoy!

Who would have thought that avocado would taste so good with chocolate? Yet, it does! It’s also SO QUICK AND EASY to make! This recipe makes about 10 bars and you CAN’T tell the difference. It is still moist and tastes sugary. Happy Baking!

WHAT YOU NEED:

** I’d recommend using an electric mixer **

Chocolate Avocado Brownie Ingredients

  • 1 ripe Avocado (medium size)
  • 3 large Eggs
  • 3 tbsp Almond Butter
  • 1/4 cup Coconut Oil
  • 2/3 cup Swerve (Erythritol or any other sugar replacement)
  • 1/3 cup Cocoa Powder
  • 1/4 tsp Salt
  • 1/2 tsp Baking Soda
  • 1 tsp Vanilla Extract
  • 1 bar 85% Dark Chocolate in chunks ( ~1/2 cup chips)

** Preheat oven to 350 degrees F (176 degrees C) **

Directions:

  1. Combine all the ingredients in a mixing bowl except the eggs and dark chocolate bar.
  2. Add 1 egg at a time to mix.
  3. Continue mixing until everything is combined and looks “smooth”.
  4. Add in Dark Chocolate chunks or chips using a baking spatula.
  5. Line 8×8 pan with baking sheet before pouring mix.
  6. Even out mix and place into oven for about 25 mins.
  7. Use toothpicks to test the brownies. Be sure to test multiple areas because you might poke the chocolate chunks.
